Why do DC->AC inverters use a center-tapped primary transformer?

Why not have a single primary coil, a single mosfet, and just turn the mosfet on and off to produce a 0-12V square wave on the primary coil, then feed the resulting 0-400V output from the transformer''s secondary into a capacitor?
